The Restaurant Wining and dining is one of the most enjoyable experiences when staying in the Grampians region of Victoria, and the Royal Mail Restaurant offers guest a unique approach to a nature-based cuisine that focuses on the best quality organic and heirloom produce and modern culinary techniques. Fresh produce is harvested daily from the hotel’s kitchen gardens, collected from the wild and sourced from local artisan producers. Orchards and an olive grove surrounding the hotel provide stone fruit, apples, pears, berries, figs, quince and olives while fresh eggs are collected daily from free-range laying hens.  Dining at the Royal Mail Restaurant requires time; like in France or Spain, time is taken to enjoy all aspects of high table culture and to experience a gastronomic journey that highlights the perfection of each ingredient. Regularly, diners still find themselves chatting away and enjoying delicacies after three or four hours…..  The Royal Mail Hotel's wine program is characterised by an uncompromising dedication to providing one of the most comprehensive and varied collections of wine in Australia, with the aim of providing depth of vintage at all levels. The impressive wine list focuses on fine drops which have been expertly stored in the hotel's temperature and humidity controlled cellar and are presented at their optimum drinking age and condition.  Dining at Royal Mail Restaurant will leave you with fond memories you won’t forget any time soon. It is rumoured that even hardened professional food critics have stated that in order to enjoy another meal at this gastronomical temple of fine food, they would very happily lodge in a bark hut…
